Apple have released a beta of a technology called Boot Camp that lets you install and boot Windows on any Intel Mac. It'll be official in the next version of OS X (Leopard, which isn't due for ages) but you can get the beta to have a play now. You can choose between Windows and OS X on booting by holding down the Option key.
Supposedly they might not be keeping this beta up for long, so even if you don't have an Intel Mac yet, you might want to download it for safe keeping. I have!
